In collab with Petare, a buttermilk fried chicken burger with American cheese, sweet and sticky glaze, charred corn slaw, habanero mayo, lettuce and pickles with homemade rosemary salted chips.
We season our chips as soon as we fry them. You can hear them hiss as we add the salt. The heat from the chips cooks the lemon and rosemary and the smell hits you as they reach the table.

Rotsen’s father gave him the nickname ‘El Pollote’, meaning ‘Big Chicken’. It’s no wonder he grew up to be one of the biggest names in fried chicken - winning Kerb food market’s ‘Bucket List’ competition in 2017. The next year he won again.
