Briddlesford started life as a dairy farm in 1923 with eight Guernsey cows. Today it’s the only Guernsey dairy farm on the Isle of Wight.
As it became harder to compete on milk price with the big commercial dairy farms, Briddlesford decided to make cheese in-house. Halloumi is the best selling cheese of the five they make, and was awarded a Gold Great Taste Award in 2018.
This is a 100% Guernsey cow’s milk halloumi (Cypriot halloumi is normally a blend of sheep’s and goat’s milk), making this British halloumi-style cheese incredibly rich and buttery.
