Our house gin is a collaboration with Psychopomp Microdistillery in Bristol. Initially created to toast the launch of our Bristol restaurant, this spirit is available online here.
Made in the classic London Dry style, the botanicals are inspired by ingredients in our kitchens, including cucumber and dill that make our pickles. Always served with Fever-Tree Mediterranean Tonic, fresh cucumber and grapefruit.
Make some very thin cucumber ribbons with a vegetable peeler.
Wrap the cucumber around the inside of the glass.
Pour the gin into a highball glass.
Add ice to the glass and top up with Mediterranean Tonic from Fever-Tree, but not all the way to the top.
Add a grapefruit wedge.
