Chimichurri is the tangy, herby Argentinian sauce that goes well with everything. Especially beef.
Our homemade chimichurri has appeared in a few specials over the years, going back to Brixton in 2012. This version is from 2016 and features our favourite combination of Brindisa chorizo (the best chorizo we’ve ever tasted), young manchego cheese (great melter) and chipotle mayo. It’s a mash-up of smoky, rich ingredients, tied together with sharp chimichurri.
Brindisa founder Monika Linton is a British food hero, credited with helping us fall in love with Spanish food. Monika started importing Spanish foods over 30 years ago and has opened a few tapas restaurants along the way.
