Filipino chef and Sarap BAon founder Budgie Montoya gave us a crash course in Filipino cooking and culture earlier this year, feeding us lots of ‘pulutan’ (snacking dishes made to be enjoyed alongside a few cold drinks) and some burgers too.

Budgie made a name for himself here in London after a string of pop-ups and supper clubs and opened his first restaurant in January 2020 just 100m from our Brixton front door. Being so close, Budgie would occasionally pick up burgers for his team, taking them back to his restaurant where he would ‘modify’ them into Filipino bacon cheeseburgers with chicharrones (pork puffs), atchara (pickled slaw) and burger sauce laced with banana ketchup. We were impressed…

Every Filipino special comes with a custom bag of pork puffs made by British snack brand The Curators featuring artwork from British-Filipino illustrator Kim Westwood. We recommend you pop a few puffs inside your burger last-minute for maximum crunchiness.

If you’re coming into the restaurant you can try a Don Papa Rum & Ginger made with rum from Budgie’s grandfather’s island mixed with Gingerella ginger ale and calamansi (Filipino lime).

October Special: Nigeria

October 5, 2021: A brand new collab with 'Nigerian tapas' pioneers Chuku's. Our collab is a love letter to Nigerian cooking, in burger form. We use a jollof sauce base like we would ketchup and make a mayo from homemade ata din din (hot pepper sauce), taming its heat but leaving lots of flavour.
